This juice has an earthy flavor that is nicely balanced by just a hint of sweetness, thanks to the beets. It’s also nourishing and a healing source of phytonutrients and antioxidant, anti-inflammatory and detoxification support.
Celery alone contains more than a dozen key antioxidants and phytonutrients that your body craves. Spinach provides both anti-inflammatory and anticancer benefits, primarily because of its abundance of phytonutrients, including flavonoids and carotenoids. Meanwhile, red cabbage delivers plenty of vitamins C and K and potassium.
Ingredients
2 green apples, cored and quartered 2
1 stalk celery, chopped 1
1 cup packed chopped spinach leaves 250 mL
1/4 beet, with greens, halved 1/4
1 cucumber, quartered 1
1/2 cup packed chopped red cabbage 125 mL
Instructions
1. Using a juicer, process half each of the apples, celery, spinach, beet, beet greens, cucumber and cabbage.
2. Following the same order, repeat with the remaining apple and vegetables.
3. Whisk well and serve immediately.
