This delicious sour-yet-sweet juice is loaded with antioxidants to help your immune system function at full capacity. Collard greens deliver a healing combination of antioxidants, anti-inflammatories and detoxification benefits.
This juice is also loaded with vitamin C from the apples, vitamin A (via carotenoids) from the collard greens and kale, and manganese from the collard greens. While it doesn’t contain as much as nuts and seeds, this juice will provide about 8% of the recommended daily intake of vitamin E, thanks again to the collard greens.
Ingredients
1 cucumber, quartered 1
3 green apples, cored and quartered 3
1/2 cup packed chopped collard greens 125 mL
1 lemon, peeled and halved 1
1/2 cup packed chopped kale leaves 125 mL
15 sprigs fresh cilantro (about 1/2 bunch) 15
Instructions
1. Using a juicer, process half each of the cucumber, apples, collard greens, lemon, kale and cilantro.
2. Following the same order, repeat with the remaining fruits and vegetables.
3. Whisk well and serve immediately.
