We prefer wild rice—technically not a grain but rather the seed of an aquatic grass—over white rice, which is refined and can cause inflammation. Wild rice has appreciable amounts of vitamins B3(niacin), B5 (pantothenic acid), B6 (pyridoxine) and folate and the minerals magnesium, phosphorus, potassium and zinc.
Ingredients
3 1/2 cups water 875 mL
1 1/2 cups wild rice 375 mL
Instructions
1. In a large saucepan, combine water and rice and bring to a boil.
2. Reduce heat and simmer for 40 to 45 minutes, until rice is tender.
3. Drain and set aside to cool completely.
