Watermelon Mint

This juice packs an extra-intense punch of flavor, thanks to the mint, which brings out the sweetness of watermelon in a most delightful way. Watermelon is, of course, loaded with water, and the inner-rind contains concentrated amounts of vitamin C and potassium.
Ingredients
1/2 watermelon, inner-rind intact, chopped 1/2
1 lemon, peeled and halved 1
15 sprigs mint (about 1/2 bunch) 15
Instructions
1. Using a juicer, process half each of the watermelon, lemon and mint.
2. Following the same order, repeat with the remaining watermelon, lemon and mint.
3. Whisk well and serve immediately.
